For the first time ever, I haven’t closed the toilet lid right after going to the loo. So, of course, tonight is the time that Tolstoy jumps and falls straight into the toilet.

All women are nuts
Katy finally convinced me to watch “She’s just not that into you”. I admit that it was a fun movie, but it just reaffirms my deep conviction that all women are nuts.
Case and point: I hadn’t bought Katy flowers in a long time, so I decided to do so when we went shopping at Tesco. We’d been thinking of doing the Toffee Popcorn Bark for a while and I finally got organised and did it. Katy had mentioned earlier in the day that she wanted a big glass of wine (because it’s been a trying week with Bean), so we opened a bottle of Bordeau.
After all of this, she comes out with this gem:
Flowers, chocolate and wine, all in one day. Are you having an affair?
I love my wife, but she’s a woman, and therefore nuts.

[Recipe] Toffee popcorn bark
Line a baking tray with parchment paper. Melt 200g milk chocolate and 200g white chocolate separately then allow to cool slightly.
Pour most of the chocolate onto the tray, roughly swirling together. Sprinkle over 60g of toffee popcorn, then drizzle over the remaining chocolate. Chill until set, then break into big chunks before serving.
In one word: EVIL!!!

More money going out the window…
The rate of Consumer Prices Index (CPI) inflation in the UK matched its record high in September, rising to 5.2% from 4.5% the month before. An increase in energy costs was behind a large proportion of the rise. The 5.2% rate is the highest CPI measure since September 2008, and it has never been higher since the CPI measure was introduced in 1997.
The Retail Prices Index (RPI) – which includes mortgage interest payments – rose to 5.6% from 5.2%. The latest RPI measure is the highest annual rate since June 1991.

[Recipes] Chili
I made chili this weekend. It was nummilicious, but there is room for improvement. Though the original recipe calls for beef, I made it with turkey breast so that Katy’s mom could try some. I’ll try again with beef next time, and possibly add a bit more liquid and more heat. Even though the heat seemed quite fiery while it as cooking, once it was well reduced and had stood in the fridge overnight, it really mellowed out. I had also put some bacon off-cuts in the mix, but they were waaaay too salty for the end result.
Ingredients
2 tsp ancho chili powder
1 tsp chipotle chile powder
1 Tbsp ground cumin
2 tsp ground oregano
1 tsp thyme
1/2 tsp ground coriander seeds
3-4 Tbsp water
6 strips bacon
One 2 1/2 pound braising steak (aka chuck roast), cut into 1/2-inch cubes
1 medium white onion, chopped
1 large green pepper, chopped
1 large tin plum tomatoes
2 1/2 cups veggie stock
1 tin dark beer
1 Tbsp freshly squeezed lime juice
1 tsp sugar
Grated cheddar cheese and chopped red onion for garnish
Method
1 In a small bowl mix the chili powder, chipotle chili powder, ground cumin, oregano, thyme, and ground coriander seeds. Mix in water so that chili forms a light paste. Set aside.
2 Cook the bacon in a large skillet on medium high heat until crisp. Use a slotted spoon to remove from pan and set aside on a paper towel. Pour bacon fat from the pan into a separate container, reserve. When the bacon cools, crumble it into smaller pieces and set aside.
3 Increase heat to medium high, add back in 1 Tablespoon of bacon fat. Working in batches so that you don’t crowd the beef (crowding will steam cook the meat instead of browning it), brown the beef cubes on all sides, lightly salting as you cook the beef. Remove beef from pan, set aside.
4 Add another Tablespoon of bacon fat to the pan. Add the chopped onions and sauté until soft, about 5 minutes. Add the garlic and jalapeño, cook until fragrant, 1 minute more. Add the chili paste and cook for 2-3 more minutes.
5 Into a 6-quart thick-bottomed Dutch oven, put onion chili mixture, beef, bacon, tomatoes (break up the whole tomatoes with your fingers as you put them in the pot), water, lime juice and sugar. Heat the chili on medium high heat until it comes to a simmer. Then reduce the heat to low. Cover and cook for 1 1/2 hours. Then uncover and cook for another half hour, keeping the temperature at a place where you can maintain a simmer.
6 Mix the cornstarch powder into a little water to dissolve the corn starch (otherwise you’ll have lumps to deal with) and add to the chili to thicken it. Add salt to taste. Adjust seasonings. Depending on the acidity of the tomatoes and lime juice you may need a little more sugar to bring the stew to balance. At this point you can also add a little more chili powder if you desire more heat.
Sprinkle with grated cheddar cheese and chopped red onion. Serve with cornbread, tortilla chips, and or rice.
EDIT: I forgot to mention that I got the chili powders from Cool Chili. They rock.
Having kids is expensive
The cost of having children is not only getting more expensive, but the financial responsibilities of being a parent are becoming even longer term. Not only are there the additional costs of putting a child through University to consider, but if your child stands any chance of getting onto the property ladder, there’s a decent chance you’ll need to help to foot the bill.
According to research by LV=, the cost of raising a child until their 21st birthday is now almost £211,000, compared to £140,398 back in 2003 when the firm first looked into the subject.

Long but productive weekend
The in-laws came over for the weekend. It was Pam’s birthday. We managed to get through an impressive project list this weekend.
Mel and I laid down a new floor in the back shed so that when we buy a freezer, it won’t fall through the soft spots that had been forming in the old floor. Mel got a new motion-activated flood-lamp working to illuminate the sheds at night so that Katy won’t kill herself when she has to clean out the bunnies in winter.
We got a ton and a half of frames up on the walls – stuff that’s been piling up for years and now finally has a new home. They look really nice, but we’re running out of wall space!
There was a downside to the weekend though. Bean’s been feeling delicate for the past few days. He’s been running a fever and hasn’t been sleeping well – waking every few hours or so for a drink. This means that both parents are also dead tired.
