Shamelessly stealing this from Itchy Feet. I’ve just spent several hours over many days to get all the shit Katy and Ben need to go to the UK. And mostly, this is what’s going to happen.

I fear next year
[recipe] Filhoses de Abóbora – Portuguese pumpkin fritters
425g pumpkin puree
700g flour
1 shot of whiskey
1 packet of active dry yeast
180ml orange juice
100g sugar
grated orange zest of 1 large orange
3 eggs
1 tsp salt
Oil for frying (vegetable or canola)
Warm juice in microwave until it hits 50C.
In a stand mixer, combine the orange juice and mix with the pumpkin in a large bowl. Add the yeast, eggs, whiskey, sugar, salt and orange zest and mix well.
Add the flour and knead until a soft dough forms (add more flour if the dough seems too runny).
Cover with a clean cloth and let it sit in a warm place for at least 2 hours.
Heat oil to 180C in a deep fryer. Spoon out large tablespoon size of dough into the oil and fry until golden brown, turning over as they fry.
Place onto paper towels to absorb excess oil and coat with sugar and cinnamon.

Finally made it to Europapark
It was a very early morning, a longish drive to and from, and only involved à modicum of drama and arguments. We still managed to have a good day, overall.

Gold medallist in losing shit
With great skill and talent, the boy has managed to lose his wallet, with bus pass and debit/credit card. We are so not amused. We’ve turned the flat upside-down. I’ve scoured his room (and will probably need a tetanus booster). No luck. And, of course, it’s our fault for not having thought to put a GPS tracker on it.

I’ve just been through 3 days of advanced project management training through Webex. Super interesting, but I’m braindead. Also, for the past 3 days, my step count has struggled to go beyond 1000. Today is a record, at 412.
